There are different sizes, flavors, textures, and colors to choose from. I recommend a nice assortment of cheeses with different flavors and textures for your guests to experiment for themselves. One arrangement you might enjoy is this: Asiago, Brie, Havarti, and Roquefort. Do not forget to bring crackers (I recommend Ritz crackers) or soft bread to go with your cheese plate.

To make, place your beans, purple onion, oregano, garlic, and olive oil in a pan over low heat for about 60 seconds. Then, take your other ingredients and mix them in, making sure to thoroughly toss the salad.

Vegetarian Picnic Recipes #3: Four-Cheese Macaroni

Macaroni and cheese is a great dish for adults and children alike, especially this delightful recipe with a little twist. The four cheeses will combine their delicious flavors to create a strong yet exciting taste for your vegetarian picnic. You will need:

- 16 oz package of pasta (I recommend elbow macaroni)
- ½ cup of shredded mozzarella
- ½ cup of shredded cheddar (mild)
- ½ cup of shredded Romano
- ½ cup of shredded Parmesan (can also use Asiago)
- 1 cup of milk
- 2 teaspoons of butter

To make, bring your pasta to a rolling boil in a pot of salted water. Let boil for 10 minutes (or until tender), then drain. Add in the cheeses, milk, and butter and stir over medium-low heat until the cheese is melted together and covers the pasta. You can increase the amount of milk if you want a thinner dish, or you can cook the pasta for a shorter amount of time for al dente pasta.
